Follow this easy and simple recipe to make your own delicious apricot jam at home.
When it comes to making yummies using apricot jam, there are endless possibilities. A good batch goes great on your breakfast, lunch and dessert, and this is how you make your own.
You will need:
15 peeled and pitted apricots
6 cups of sugar
1/4 cup lemon juice
A big glass jar for storage (can be replaced with smaller jars)
Crush the apricots and place them in a large pot, then at the lemon juice and sugar. Slowly bring to a boil over low heat whilst stirring until all sugar is dissolved. Kick up the heat to medium about 5 minutes into it, and then up to high about 10 to 12 minutes later.Once you get it bowling, leave it on high heat for about 30 minutes.
When the mixture thickens, remove from over the fire and skim the foam off the surface.
Pour the apricot jam into the large jar, leaving about 2 centimeters clear to the top. Once full, give the jar gently yet firm taps to the side and bottom to remove any air bubbles, then screw on the lids.
Let the jars sit at room temperature for about 24 hour before you move them to the fridge, give them out to friends, open one up for a taste or put them away for storage.
