Benefits of healthy and tasty Creamy Mushroom Soup.
There’s a great misconception that vegetables need to have color to be nutritious, and there’s also the larger misconception of mushrooms being vegetables.
Edible mushrooms are the fleshy, fruit bodies of several species of macrofungi, fungi which develop structures that are large enough to be seen with the naked eye. They grow either below ground or above, and what makes them edible is either the absence of poison. or appealing taste and aroma.
Mushrooms are usually a great source of many nutrients, such as antioxidants, Vitamins C & D, iron, folate, potassium and fiber.
To make your own pot of creamy mushroom soup for those days you feel for something different, we got you covered.
You will need:
¼ Cup unsalted butter
2½ Pounds sliced, fresh mushrooms
1 pinch salt
1 Diced yellow onion
1½ Tablespoons flour
2 Cloves chopped garlic
4 Cups chicken broth
1 Cup water
1 Cup heavy whipping cream
1 Teaspoon freshly chopped scallions and thyme leaves
Let the butter melt in soup pot over medium heat. Throw in the assorted chopped mushrooms and season with some salt. Let them cook until soft and golden brown. Keep some raw pieces of mushroom for garnish. Then throw in the onion for a few minutes.
Blend in the flour while, stirring, the the garlic and sprinkle some thyme, for 2 minutes. Pour in the chicken broth and water, and bring to a boil for one hour.
Pour the soup in batches into a blender and mix into a smooth,thick consistency.
Return to pot and stir in the cream, then add salt and pepper.
Serve your Mushroom Cream Soup while it’s still hot. Garnish with scallions, thyme and mushrooms.
