3 Sliced large chicken breasts
1 Sliced red bell pepper
1 Sliced green bell pepper
1 Sliced yellow bell pepper
3 Tablespoons oil
1 Sliced onion
1 Teaspoon salt
1 Teaspoon pepper
1 Tablespoon chili powder
1 Tablespoon cumin
1 Tablespoon garlic powder
5 Cups milk
4 Cups penne pasta
1 Cup shredded pepper jack cheese
In a large pot, heat the oil and cook the chicken until no pink is visible, then take it out and put aside for a while.
Throw in the bell peppers and onion, and cook until the onion is translucent.
Return the chicken to the pot, and add the salt, pepper, chili powder, cumin, and garlic powder, and stir for an even coat.
Por in the milk and the penne, while stirring constantly. Don’t let the pasta stick.
Cook for about 8-10 minutes, or until the pasta is cooked and the mix turned into a thick sauce.
Add the cheese and mix until melted, and garnish with parsley.
