Spinach Stuffed Chicken

4 Pieces chicken breast
300 Grams chopped spinach
½ Yellow onion
1 Cup cottage cheese
2 Tablespoons Cajun-style seasoning
2 Tablespoons melted butter

Wash the spinach and squeeze out excess water. Mix the spinach with the onion and cottage cheese in a large bowl.

Rub the Cajun-style seasoning into the chicken breasts. Evenly divide the spinach mix over the center of each chicken breast, then fold them and secure with toothpicks.

Place the chicken in a lightly oiled baking tray, and drizzle with the melted butter.

Bake in a preheated oven over 175 degrees Celsius for 25 minutes.

Serve the spinach stuffed chicken with mashed potato or pasta.
