As part of Ramadan spirit, The Life Pile will suggest daily recipes that are easy and tasty. Today’s recipe is: Creamy Tomato Chicken
6 Chicken thighs
3 Tablespoon unsalted butter
4 Cloves chopped garlic
1 Cup chicken broth
½ Cup heavy cream
⅓ Cup sun-dried tomatoes
1 Teaspoon dried oregano
1 Teaspoon dried thyme
¼ Cup fresh basil
Salt and pepper
Melt two tablespoons of the butter in an oven-friendly skillet. Season the thighs with salt and pepper, and add them skin side down. Let them sear on both sides until slightly crisp.
Put aside the thighs and drain the skillet from fat residue.
Melt the remaining butter in the same skillet and toss around the garlic until fragrant. Then add the chicken broth, heavy cream, sun-dried tomatoes, oregano, basil, thyme and let them simmer over low heat.
Return the thighs to the skillet and put into a preheated oven and bake for half an hour under 200 degrees Celsius.
