Sometimes you feel like having a really fancy lunch or dinner, but want it in the comfort of your own home. For those times, we bring you ultimate chicken fettuccine alfredo recipe.
1 kg Chicken Breast
500 grams of fettuccine (or any other type of pasta)
500 grams of fresh mushrooms, thickly sliced
1 small onion, finely chopped
3 cloves garlic, minced or pressed
1/2 cup milk
1/2 heavy cream
1 handful of finely chopped parsley
Salt and Pepper
1 tablespoon butter
Cook the fettuccine (or other pasta) in boiling water according to instructions. Drain from water and set it aside.
Slice the chicken breast into small strips and cook them with some olive oild over medium heat for about 5 minutes or until cooked through. Once they’re done, put them in a plate and set aside.
In the same pan you cooked the chicken in, heat a bit of olive oil with the butter. Saute the onion for about 3 minutes, then add the mushrooms and cook for another 6 minutes. Then add the garlic and saute for half a minute.
Add the milk and heavy cream and let it simmer over medium to high heat for another 6 minutes. When you will notice that the sauce begins to thicken, add the chicken, parsley and season with salt and pepper.
Add the cooked pasta and give it a good mix. After a minute, turn off the heat, cover the pot and let it rest for 10 minutes before serving.
