Shrimp Fettuccini Alfredo

Ingredients
500 Grams fettuccine or other pasta
500 Grams shrimp, peeled and deveined
1 Tablespoon oil
1 Small finely chopped onion
2 Tablespoon butter
1 Clove garlic
⅓ Cup white grape juice
2 Cups heavy whipping cream
⅓ Cup parmesan cheese
Salt and pepper
Parsley or chopped basil for garnish
Instructions

Cook the fettuccini in a pot of boiling water with a tablespoon of salt and a drop of olive oil. Let boil for 9-11 minutes, drain and set aside.

Season the shrimp with salt and pepper, and put them in a preheated oiled up skillet. Cook either side for 2 minutes, or until they are golden and pink. Remove from skillet and put aside.

In same skillet, over high heat, mix the butter with the onion and sauté until golden. Add the garlic and cook for another minute, then add the white grape juice and reduce heat. Keep stirring so the sauce doesn’t stick.

Add the cream and let simmer for 2 minutes, then sprinkle in the parmesan and keep stirring until you get a creamy and smooth consistency. Then turn off heat.

Add salt and pepper, and we suggest some paprika for flavor. Mix in the pasta and shrimps.

Garnish your plates of Shrimp Fettuccini Alfredo with chopped basil or parsley and parmesan cheese.
