As part of Ramadan spirit, The Life Pile will suggest daily recipes that are easy and tasty. Today’s recipe is: Ratatouille
3 Tablespoons olive oil
4 Garlic cloves
1 Bay leaf
1 Red bell pepper
4 Plum tomatoes
1 Teaspoon kosher salt
½ Cup shredded basil
Start by cut and slice your veggies into the shape you prefer. (Peel the veggies which need peeling)
Heat olive oil in a large pan and add the onion, garlic and bay leaf. Keep stirring until the onion goes softer.
Throw in the eggplant and stir fry it until it goes softer, around 8 minutes. Add the zucchini, bell pepper, tomatoes and the salt. Cook over medium heat for around 8 minutes, stirring occasionally.
Stir in the basin and a pinch of ground black pepper.
Top your ratatouille plate off with some cheese for some extra flavor.
