Chicken Asparagus Stir-Fry
Ingredients
2 Large chicken breasts
2 Tablespoons of minced garlic
2 Tablespoons of sliced ginger
1 Tablespoon soy sauce
1 Tablespoon sugar
2 Tablespoon cornstarch
1 Tablespoon salt
1 Tablespoon apple vinegar
1 Cup chicken broth
100 Grams Asparagus
Chopped scallions
Olive oil
Cup up the chicken breasts into short strips. Mix the chicken strips with 1 tablespoon of minced garlic, 1 tablespoon of sliced ginger, 1 tablespoon of cornstarch, soy sauce, sugar, salt, and apple vinegar.
Heat some olive oil in a wok pan and throw in the asparagus and scallions, with 1 tablespoon minced garlic and 1 tablespoon sliced ginger, and work them around for 2 minutes. Add half a cup of water and some salt, work them around for another 2-3 minutes, then move them out of the pan and put aside to let them rest.
Heat some olive oil in the same pan and throw in the chicken mix. Cook the chicken on the outside, then add the asparagus mix with the broth mix. Bring to the boil and leave for 2 minutes.
Serve over cooked, steamed or fried rice.
