As part of Ramadan spirit, The Life Pile will suggest daily recipes that are easy and tasty. Today’s recipe is: Stuffed Potato Skins
Stuffed Potato Skins
1 Box of sour cream
1 Cup of vegetable oil
2 Cups of shredded cheddar cheese
1 Cup of cooked turkey bacon (or other cold cuts)
Poke holes in the potatoes using a fork and microwave them for about 6 to 7 minutes. When the potatoes are done, cut them diagonally and empty their cores, but keep about 1-2 centimeters of the potato closest to the skin.
Deep fry the potato halves for about 5 minutes, and then dry them over some paper towels.
Mix the turkey bacon with the cheddar and fill the potato halves. Bake in a pre-heated oven at 180 degrees Celcius for 7 minutes.
Sprinkle some chopped parsley or scallions over the stuffed potato skins. Serve while hot next to sour cream dip.
