Homemade Marshmallow Fluff

Probably one of the best homemade candies which you can put on nearly anything, or dip anything in it. Marshmallow fluff! And we are are going to teach you how to make it.

3 egg whites, room temperature
2 cups light corn syrup
A pinch of salt
2 cups sifted fine/powdered sugar
1 tablespoon pure vanilla extract

To start off with, beat the egg white, with the corn syrup and salt in a large bowl with an electric mixer on high speed, until mixture is thick and doubled in volume, for about 5 minutes. Using a manual whisk will require too much effort. Turn down the mixer speed to low, and throw in the fine sugar until thoroughly combined, and no chunks remain. Add the vanilla extract into the marshmallow creme just until it all evens out.

Your marshmallow creme is now done, and you can choose to eat it directly, cover and refrigerate it for up to two weeks, or freeze it for up to one month.

Marshmallow creme can be used in several, easily, homemade desserts. You can use it as chocolate cupcake filling, add it to your peanut butter sandwich, topping on waffles, pancakes and cakes and much more.

You can also use it as a dip for all sorts of cookies and sweets.
